On Thursday, 16th February 2023, with the collaboration of Ristorazione Ottavian, our lunch menu will be prepared using less gas/energy resources, as part of the M’illumino di meno initiative. This initiative promotes a more rational use of energy resources during food preparation and in our everyday lives. The menu has been carefully selected and will feature passively cooked food. With the passive cooking method you only boil the pasta for two minutes, then you turn the burner off, cover the pot with a lid, and let the pasta sit in the water for the remaining minutes left.
So a six-minute pasta would boil for two minutes and sit for four; a method that uses far less energy.

- Tomato/oil pasta (passive cooking)
- Mozzarella cheese STG
- Fennel and orange salad
- Salad bar
- Chocolate pudding
